Happy Presidents Day! I trust you’ve been watching West Wing or House of Cards in honor of this fine government holiday. I got super addicted to House of Cards a couple of weeks ago and watched it all in 2 or 3 goes. I could not stop. If you have seen it all, I’m always up for a chat about it. It was so devious and dramatic. It’s great – check it out! I hope that Netflix continues to produce some quality television shows. I prefer it streamed at my own pace. Although watching Downton Abbey every week has been fun too. That finale last night – whoa! Such an emotional roller coaster. Ok, enough TV talk. We have some cooking to do so let’s get started!
Are you ready for the easiest Crock Pot recipe ever?! Good! It turned out better than anticipated and allowed me to clean out my freezer. Win-win.
- 1 pound of chicken (breast or thighs)
- 3 garlic cloves, minced
- 1 cup of chicken broth
- 1/2 cup of teriyaki sauce
- 1/3 cup of brown sugar
- Frozen vegetables (add later)
What to do:
Combine the chicken, garlic, broth, sauce and sugar together in the Crock Pot. Cook on low for 4-6 hours. About an hour before serving, add the frozen vegetables to the Crock Pot. Use whatever veggies you like! I went with broccoli, cauliflower and carrots. Serve over rice!
This is simple and delicious. The sauce is the right combo of sweet and salty. I’m a fan and will make it again!
