Crock Pot Pumpkin Bread

It’s been really strange weather in Chicago this week… so much so that it feels like fall. I got a strong craving for pumpkin bread so I decided to take my mom’s traditional recipe and try it in the Crock Pot. It worked out super well! Here is the recipe for you!

Forget the oven - make your own batch of delicious pumpkin bread in the Crock Pot! This recipe comes from my mom and has been adapted for slow cooking.

Prep Time: 30 minutes

Cook Time: 3 hours, 30 minutes

Yield: 1 loaf

  • 1/3 cup shortening
  • 1 & 1/3 cup of sugar
  • 2 eggs
  • 2/3 can pumpkin
  • 1/3 cup water
  • 1 & 2/3 cups of flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cloves
Use a large Crock Pot - one big enough to fit a bread pan. Put tin foil balls at the bottom of the Crock Pot. Then put the bread pan in. Combine shortening and sugar in large bowl and mix. Add in eggs, pumpkin and water and mix again. Slowly add in the rest of the ingredients and mix. Grease the bread pan and add the mixture evenly. Cover the top of the Crock Pot with a paper towel (to absorb moisture) and then put the lid over the paper towel. Turn Crock Pot on high and cook for 2-3 hours. Don't check on it until 2 hours have passed. It took me about 3.5 hours until it was cooked. Test the consistency with a toothpick. When done, remove from Crock Pot and let cool.

Review: This has always been one of my favorite foods. This is still the case.

    sounds good and easy. i recently found a good deal on canned organic pumpkin and i have run out of good ways to use it (family is getting bored actually). this will do the trick, i am really not good at baking and this sounds like it is not hard to do
