Happy last weekend of May! I feel like this Spring has flown by. Our vegetables are starting to sprout in our raised bed, so that is very exciting! Soonish, we’ll be able to cook from our home grown veggies. For this former city girl, it’s a first for me.

Last night, we made a lovely peanut satay in the Crock Pot. It has a ton of flavor and goes very well with brown rice. I also think this would go well with spaghetti squash if you didn’t want to do rice or noodles.

Crock Pot Peanut Satay
A scrumptious Thai peanut dish. So good I forgot to take a picture until I started eating.
Prep Time: 15 minutes
Cook Time: 3 hours, 30 minutes
Yield: 4
Ingredients:
- 1.5 cup peanut butter (I used natural crunchy)
- 4.5 tablespoons brown sugar
- 6 cloves garlic, minced
- 15 ounces stewed tomatoes
- 1 small sweet onion, chopped
- 2 red bell peppers, cored, seeded, and chopped
- 1.5 cups water
- 3 tablespoons soy sauce
- 2 teaspoons chili paste
Instructions:
Add all ingredients to Crock Pot and stir. Cook on high for 3.5 hours or on low for 4-5 hours. Serve over rice or noodles.

Review: Two thumbs way up on this one. It’s really delicious! You could also add all kinds of other veggies in here like broccoli, pea pods, baby corn, etc.
