Crock Pot Mediterranean Chicken

After a super busy weekend with my sister and her boyfriend, I needed to make something quick and easy.  It’s also Thanksgiving this coming week so I needed to make something with what food I already have since I’ll be going to Minnesota in a couple of days.  Here is what I came up with.  Are you ready for the world’s easiest recipe? Good. Here it is!

The fanciest simple dinner ever.


  • 3 frozen chicken breasts or 4-5 frozen chicken thighs
  • 1 package of frozen artichoke hearts
  • 1 can of diced tomatoes and chilies
  • Parmesan cheese to taste

What to do:

Put everything in the crock pot.  Cook on low for 7-8 hours or high for 4-5 hours.  Add a little Parmesan cheese to the top. Serve over rice or quinoa!


So easy and so tasty! The chilies give it just the right amount of kick.  This is one of my new favs.  It pays to keep artichoke hearts handy in your kitchen at all times.
