Crock Pot Chicken Noodle Soup

I’ve got a rockin’ recipe to share with you today and a story of how this recipe accidentally came to be. On Sunday, I set out to create my very own Lo Mein recipe. I was very excited about this Lo Mein so I treked to the grocery store for some Lo Mein noodles and ingredients. Everything went well except for the end result. My Lo Mein was not Lo Mein at all – it was basically Chicken Noodle Soup minus the broth. It tasted all wrong. SO, tonight I went to the store and bought some more chicken broth and heated it up on the stove and sure enough – I’ve got a winning Chicken Noodle Soup recipe! So, here it is!

Chicken Noodle Soup like your Mom used to make!

Prep Time: 20 minutes

Cook Time: 6 hours, 0 minutes

Yield: 6

  • 3 chicken breasts, cut into small pieces
  • 2 carrots, chopped
  • 2 celery stocks, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1/2 teaspoon ginger powder
  • 3 tablespoons water
  • 2 tablespoons corn starch
Put all veggies at bottom of the Crock Pot. Lay chicken over it. Pour chicken broth and ginger powder over top. Cover and cook for 6 hours on low. Mix water and corn starch together and add to mixture and cook for another 20 minutes. Serve with crackers!

Review: Love it! This reminds me of Chunky Chicken Noodle that my mom used to always buy. Very happy with it!
