Broccoli Bites

Not gonna lie, I was skeptical about making broccoli bites. I found this recipe on Pinterest and figured it wouldn’t hurt to give it a shot. Essentially you are making cookies – only with broccoli and cheese instead of sugar and chocolate. The process was fun and these were really tasty. This is the perfect appetizer for parties. It’ll impress your guests and certainly get them asking questions about how this recipe came about.

Create broccoli bites for your next party and potluck! This unique and tasty appetizer using just broccoli, cheese, bread crumbs and eggs is easy to prepare and will impress your friends.

Prep Time: 10 minutes

Cook Time: 30 minutes

Yield: 12 bites

  • 3 broccoli florets (or 1 bag frozen broccoli), steamed
  • 3 eggs
  • 1.5 cups shredded cheddar cheese
  • 1 cup bread crumbs
  • Salt and pepper to taste
Pre-heat oven to 375 degrees F. Steam the broccoli. Add broccoli, eggs, bread crumbs and salt and pepper to large bowl. Mix with hands. Roll bites into 12 balls. Place on cookie sheet with wax paper over it. Bake for 30 minutes (check in after 20 minutes). Let cool and enjoy!

Review:  These are really good! I wasn’t sure what to expect, but they have some cheesy deliciousness in every bite. I’ve never enjoyed broccoli more.
