Crock Pot Pumpkin Oatmeal

Happy fall! The fall colors have peaked in La Crosse and it’s been super fun admiring the trees around town.

It’s also been wonderful cooking with fall vegetables. Being true to my white, middle class roots, I love pumpkin everything. While John Oliver has many compelling points in the below video, I still can’t help myself.

The recipe I am going to share with you today is for a pumpkin oatmeal. It is the perfect recipe to put together right before bed and cook while you sleep. I did this last Sunday and woke up on Monday to the wonderful aroma of sweet pumpkin. Basically what I am saying is that this will help you hate Monday a little less.

Crock Pot Pumpkin Oatmeal
The perfect overnight recipe to wake up to.

Prep Time: 10 minutes

Cook Time: 8 hours, 0 minutes

Yield: 4

Ingredients:
  • 1 cup steel cut oats
  • 3.5 cups of water
  • 1 cup of pumpkin puree
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/2 cup of honey
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon of chai spice
  • Pecans (optional)
Instructions:
Mix all ingredients in the Crock Pot and cook on low for about 8 hours. Add pecans on top for garnish if desired. Enjoy!

Review: This was a simple and delicious recipe! M and I ate it for two mornings and loved it! It’s also very filling. Generally, I am ready for lunch by about 10:58 am, but both days I had this I didn’t eat lunch until 12:30!
