You guys, this recipe THE BEST. This recipe is the answer to all of your problems in life. If you like buffalo chicken, this is 100x better because it involves cheese and lasagna noodles too! Have I sold you on it, yet? I hosted a crock pot party a couple of weekends ago and got made fun of a lot because I’m 26 years old and I made my friends bring old lady crock pots over on a Saturday night. But, honestly who doesn’t love lots of hot food and lots of wine? Everyone that made fun of it is just jealous of how awesome crock potting is. This recipe was a big hit at the party, so you should make it too. Also, you should have a crock pot party because it’s an awesome excuse to overeat and get drunk.
- uncooked traditional lasagna noodles
- 4 already cooked chicken breast halves
- 1 jar of prepared pasta sauce – around 15 oz
- 1 cup buffalo wing sauce
- 3 red, yellow, green or orange bell peppers – I use different colors for aesthetics
- 1 tub of ricotta cheese (15 oz) – don’t skimp on the fat – I used reduced fat and it wasn’t as good
- 2 cups shredded cheese (mozzarella and cheddar blend) – full disclosure: I used like most of a bag of this blend
- 1/4 cup of water – use to get remains of pasta sauce out of jar and pour on top
What to do:
You need a big crock pot for this one. I used a 6 quart one and it was almost filled to the top. Mmm….
In a large bowl, mix the chopped chicken breast, pasta sauce and buffalo sauce. Chop up the peppers and add them to a separate bowl. Ladle out a big spoonful of the sauce and put on the bottom of the crock pot. Next, put down a layer of lasagna noodles. You’ll have to break them a lot to get them to fit since crock pots are round. Smear on some ricotta cheese on top of the noodles. Add a layer of peppers. Then add a couple ladles full of the sauce on top of that. Then sprinkle some of the cheese on top of that and marvel at how amazing this combo is. Then start another layer and continue until you run out of the sauce mixture and peppers. I had a couple of layers at least.
Pour the water into the empty pasta jar and shake it up. Pour that mixture on top of the lasagna. Then cover and turn on the crock pot. Cook on low for 6-7 hours or on high for 4-5 hours.
When it’s finished, turn off the crock pot and let it sit for about a half hour. It’ll fall apart regardless, but it stands a better chance if you let it sit for a half hour. Even if it falls apart, it’s still delicious.
It’ll make your kitchen smell awesome. It’s a masterpiece. It’s one of my fav foods. Enjoy.
