Baked Sweet Potato with Parmesan: A Pinterest Adventure

Sorry it’s been a little while, but I’ve got a cool new recipe to share! I’m growing my non-Crock Pot section out a bit because I keep getting sucked into Pinterest recipes. It’s just so addicting. I made these sweet potato chips tonight and they are really light and refreshing. I hope you enjoy!

Baked Sweet Potato with Parmesan: A Pinterest Adventure
Enjoy this refreshing appetizer. Made with sweet potato, a super food, as well as some rosemary, thyme, olive oil and Parmesan cheese, this snack will be a hit at any party!

Prep Time: 15 minutes

Cook Time: 45 minutes

Yield: 2

Ingredients:
  • 1 large sweet potato (round ideally)
  • Olive oil
  • 1 tablespoon rosemary
  • 1 teaspoon thyme
  • 1/2 cup of Parmesan cheese
  • 1 tablespoon Peacan bits
  • Wax paper (Parchment paper)
Instructions:
Preheat oven to 400 degrees F. Slice the sweet potato into about 8-12 round chips. They should be about 1/3 inch thick. Place on the wax paper. Pour a generous amount of olive oil on each. Mix all other ingredients (FYI: my measurements are very approximate) in a small bowl and put an even amount on each sweet potato chip. Bake for 40-50 minutes. Enjoy!
